seasonal eating video series

This Seasonal Eating Video Series was funded in whole or in part by the Illinois Department of Agriculture to increase knowledge, access, and consumption of specialty crops in northern Illinois, and to expand the availability of fresh, locally-grown produce and strengthen the state of Illinois' specialty crop industry.

1: Pickled Onions

Pickling an onion is a way to change the flavor and astringency into something more palatable and versatile for many people. It’s also an easy way to extend the life of your onions (or other produce) that might not last much longer in their raw state. In this video Allyson Rosemore (Owl’s Roost Farm) explains the details of why this works so well, and demonstrates how to pickle onions with a base brine recipe that can apply to any pickling project.

2: cranberry relish

Cranberries are famously used in the US as a sweet holiday side dish, but it can also work great in more savory and tangy applications. Allyson Rosemore shows how to turn your fresh cranberries into a versatile relish that can work with other ingredients to pack major flavor and nutrients in meals outside of Thanksgiving. ​

3: Roasting squash

Roasted Squash is a classic side dish beloved in the winter due to its ease of storage. In this video, Allyson talks about the differences between winter and summer squashes and how you can roast both of them to work in a variety of different meals.​

4: Roasting vegetables

Roasting plants is a great way to modify the flavors of many vegetables, often bringing out sweet and nutty aspects of produce. Allyson talks about how different vegetables can be roasted in different ways, and makes this be a “choose your adventure” style of instruction to encourage creativity in the kitchen.

5: winter salad

In this final video of our Seasonal Eating Series, Allyson shows how all the previously made ingredients come together in a wonderful dish that is sure to please many at your table. This richly flavored salad could add some color to your spring holiday meal as a side or be a focal point on its own.
