Join us this weekend for our Sweet Breads class, where we’re celebrating seasonal sweetness fresh from the farm. Together, we’ll work with ingredients like fresh berries, tart rhubarb, and even squash to create comforting, flavorful breads from scratch.
Chef Andy will walk you through mixing, folding, and baking techniques that bring out the best in each ingredient, and you’ll learn how to prepare and preserve these seasonal flavors so you can enjoy them all year long.

Our Spring Indulgence class came together with ingredients from farms and makers right here in our region, and you could truly taste the difference in every bite.
π₯ The chocolate torte featured eggs from Third Great Farm and raw honey from Raines Honey Farm.
π₯© The steak for both the entrée and Wellington came from Irish Grove.
π² Our French onion soup was built from onions, shallots, and garlic from Bountiful Beloit.
πΎ Flour came from Hazzard Free, and the cheese π§ that brought it all together came from Cheese Brothers out of Barron, Wisconsin.

Randy mixed up his custom seed starting blend while Appy and Trisha got their hands dirty planting beans, tomatoes, peppers, and herbs for this year’s garden. This work is proudly supported in part by the IL Specialty Crop Grant
We are already gearing up for round two of seed starting this week, getting ready for the week ahead.
Behind the scenes, Randy, Andy, and Rowan have been putting in some serious work getting the garden ready for spring, repairing raised beds, laying mulch, and clearing bramble to make room for new beds coming soon also supported by the grant.

This week on Take Root, we got down to the real work of building a farm from the ground up π±
Students took their ideas and started turning them into actual farm plans. They mapped out their land, their systems, and how everything fits together. Up to this point, they’ve built their vision and learned how to market and sell it. Now it’s about getting their hands dirty, and turning a dream into a reality.
Designing a farm map isn’t just about layout. It’s about understanding what you need, what it takes, and how to move forward with intention. This sets the foundation as we head into the financial side of the course.

Farm Camp is where kids get their hands dirty, their feet wet, and live like a farmer!

Our maple syrup hike wasn’t just a walk in the woods..it was a full experience. From tapping trees to watching the boil, every step reminded us how much patience, skill, and tradition goes into something as simple (and incredible) as maple syrup.
There’s something special about learning where your food comes from, especially when it’s surrounded by fresh air, good people, and a whole lot of curiosity. Kids asked questions, adults slowed down, and everyone left with a deeper appreciation for the land—and maybe a little sticky sweetness too.
This is what farming is all about! Connection with not only the land, but each other, education, and moments you can’t get anywhere else.

We loved being part of Keith Country Day School’s 2026 Interim Program: “Farm to Table – You Are What You Eat.”
Community Programs Director Trisha Wilks and Head Chef Andy Skupien spent two engaging days with Upper School students exploring the difference between regeneratively farmed foods and conventionally produced foods.
Students didn’t just hear about it — they experienced it.
Through hands-on demonstrations and tastings, we compared three everyday staples:

Together, we looked at how farming practices affect soil health, animal welfare, nutrition, and flavor — helping students connect what’s on their plate to where it truly comes from.
Keith’s 3-day Interim program brings students together with educators and community professionals to explore agriculture, sustainability, culinary arts, and nutrition through small-group classes, workshops, and real-world experiences. We were honored to contribute to such an inspiring program that encourages curiosity, critical thinking, and a deeper appreciation for local food systems.
